One of our favorite summer dishes is seared scallops with a fresh corn relish. The scallops were dried and dredged in flour. We then browned them in a pan with olive oil over meduim high heat. Fresh corn on the cob was steamed and cut off the cob. The corn was tossed with chopped bacon and fresh tomatoes. We added the mixture to a red wine vinegrette.
We love the fresh produce and supporting local farmers as much as we can!
